To make the peanut butter base, mix the coconut oil, cracker crumbs, confectioner's sugar, and the 1 cup peanut butter in a medium bowl. Stir until it's all well blended and it has the texture of wet sand. Press it into the bottom of a 9x13 glass baking pan.
To make the chocolate covering, melt the chocolate chips and peanut butter over a double boiler on the stove (or use the microwave), stirring until the mixture is smooth. Spread over the top of the peanut butter base and put it in the refrigerator for at least one hour.
Cut into squares and enjoy your vegan peanut butter bars!
