Vegan Peanut Butter Bars Recipe

This vegan peanut butter bars recipes is perfect for you, whether you're trying to bust through some pregnancy cravings or giving in to a craving. It also makes a delicious vegan dessert for your kids, whether it's just a regular school night or you're making dessert for a birthday party, barbecue, or a school bake sale.

It's quick and simple, and takes only a few ingredients. And what's a better combination in the world than chocolate and peanut butter? This peanut butter bars recipe reminds me of eating peanut butter cups as a kid, and while I can't say it's incredibly healthy, it is incredibly good!

And plus, you can adjust the types of ingredients you use to suit your needs. For instance, instead of chocolate chips you can use carob chips. You can use Earth Balance butter instead of the coconut oil. You can use any kind of nut butter you like best. And, vegan graham crackers can be a real beast to find in stores, so you could use graham flour mixed with some sugar, pretzel crumbs, or animal cookie crumbs.

Ingredients:

  • 1 cup coconut oil, melted
  • 2 cups graham cracker crumbs (or graham flour and sugar, pretzel crumbs, or another cookie crumbs)
  • 2 cups confectioner's sugar (you can grind cane or date sugar into a powder)
  • 1 cup natural peanut butter (use one that is just raw peanuts, no additives)
  • 1 1/4 cups semi sweet chocolate chips (or carob chips)
  • 4 Tbsp. peanut butter

Directions:

To make the peanut butter base, mix the coconut oil, cracker crumbs, confectioner's sugar, and the 1 cup peanut butter in a medium bowl. Stir until it's all well blended and it has the texture of wet sand. Press it into the bottom of a 9x13 glass baking pan.

To make the chocolate covering, melt the chocolate chips and peanut butter over a double boiler on the stove (or use the microwave), stirring until the mixture is smooth. Spread over the top of the peanut butter base and put it in the refrigerator for at least one hour.

Cut into squares and enjoy your vegan peanut butter bars!
